<p>Low Carb Recipe of Chinese Green Beans</p>
<p>Ingredients:<br />
1 pkg frozen green beans &#8212; (16 ounce) 500g<br />
1 pkt chicken broth &#8212; dry crytals<br />
1 bunch scallion<br />
2 lg garlic bulb<br />
1/2 tsp ground ginger<br />
1 tsp splenda<br />
1 tbsp peanut butter &#8212; creamy<br />
1/8 tsp sesame oil &#8212; chinese</p>
<p>Directions:</p>
<p>In a 2-quart 2 litre microwave-safe casserole dish, combine green beans and broth granules. Cover and microwave on high for 4 minutes. Meanwhile, slice white bulbs of scallion into rings and mine garlic. In small bowl, combine ginger, soy sauce and SPLENDA. Add scallion rings and garlic. Set aside. Remove green beans from microwave and uncover. Pour sauce over beans and stir. Cover and microwave on high for 4 minutes. Stir in peanut butter and sesame oil until sauce coats the beans and serves immediately. Make 6 servings</p>

<p>52 Calories; 2g Fat (29.4% calories from fat); 3g Protein; 7g Carbohydrate; 1g Dietary Fiber; 0mg Cholesterol; 143mg Sodium. Exchanges: 0 Grain (Starch); 0 Lean Meat; 1 Vegetable; 0 Fat.</p>
<p>Low Carb Recipe of Lemon Chicken</p>
<p>Ingredients:<br />
2 tablespoons Dry sherry<br />
4 green (Spring) onions, chopped<br />
1 Piece of root ginger, shredded<br />
500g (1 pound) boned chicken, cut into 1 inch strips<br />
2 Celery sticks, sliced<br />
125g (4oz) button mushrooms, quartered<br />
1 Green pepper, cored, seeded, and sliced<br />
2 tablespoons Light soy sauce<br />
Shredded rind of 2 lemons<br />
A few lemon slices to garnish<br />
2 tablespoons oil for stir-frying</p>
<p>Directions:</p>
<p>Put the sherry, spring onions and ginger in a bowl. Add the chicken, toss well to coat, then leave to marinate in the bowl for 15 minutes.</p>
<p>Heat the oil in a wok or frying pan.  Add the celery, mushrooms, and the green pepper and stir-fry for one minute. Add the chicken and marinade, then cook for 3 minutes. Stir in the soy sauce and lemon rind then cook for a further minute.</p>
<p>To serve, pile into a warmed serving dish and garnish with lemon slices. Makes 4 to 6 servings.  Preparation Time: 45 minutes</p>

<p>3) You need to eat as many different types of vegetables as possible.  The recommended amount is five pieces of fruit and vegetables a day but when you are losing weight, you should double this. Not only will they keep you feeling full but you are less likely to reach for sugar fixes.   Salads are a great start to any meal but you could also have home made vegetable soup as well.  Just skip the salt when you are making it.</p>
<p>4) Drink plenty of water as it helps to detoxify your system.</p>
<p>5) Dump the bad fats.  Fat has got a very bad reputation and this is completely deserved when it comes to saturated fats.  These are not only linked to putting on weight but are also linked to heart disease and cancer.  The good news is that they are quite easy to avoid if you give up cakes, biscuits, processed foods, take aways and frying your home made food.   Yes I know that sounds like a lot but if you are going to lose weight, you need to face facts. Your unhealthy diet has to go or you may as well give up now.</p>
<p>6) Increase the good fats.  Olive oil is an excellent source of monosaturated fats as are the oils made from peanuts, almonds and rapeseed.</p>
<p>7) Low carb foods include skimmed milk, cottage cheese, high fiber bran, home made muesli, skinless chicken and turkey breast, pork tenderloin, veal, round beef, hamburgers made with extra lean mince eaten open faced i.e. you only use one wholemeal bun.</p>

<p>Protein is a key part of a healthy eating plan. It provides essential amino acids required to build and maintain healthy tissues, organs and hair.  It also keeps us feeling fuller for longer so it is a good idea to add a little to every meal.  Good quality poultry is a great source of protein. If possible chose free range as you do not want to risk eating animals that have been injected with hormones. Don&#8217;t have chicken every day though.  There are plenty of other sources of quality proteins including low fat dairy products, good quality red meat, beans and pulses and fish.</p>
<p>You don&#8217;t want to be eating grilled chicken all the time so why not try something a little different.  Here are a couple of chicken recipes you may find useful:</p>
<p>If you like your sandwiches you can still eat them on a low carb diet.  The brad must be whole meal high fiber not white.    To prepare a sandwich, simply take four slices of your bread and some cooked chopped chicken breast.  Add some shredded lettuce and a sliced tomato.  Top with low fat Swiss style cheese (the one with the holes!). You should avoid using butter on the bread. You can add a low fat salad dressing if you find the sandwich too dry.</p>
<p>You can also have chicken curry but make it at home.  Fast foods and shop bought processed meals contain a lot of hidden sugars, salt and bad fats.  This will not only stop you losing pounds but will also increase your risk of heart disease and raise your insulin levels. Keeping insulin levels low is key to losing weight as the lower levels inhibits the formation of fat and encourages your body to covert the insulin to energy.</p>
<p>When making curry at home, add extra chilies if you can as they help to speed up your metabolism so you burn fats faster.  Serve with brown rice and skip the Nan bread and poppadoms.</p>
<p>If you must fry your chicken, use a spray vegetable oil and a non stick pan to reduce your fat intake. The poultry should take up a maximum 25% of your dinner.  50% of your meal should be vegetables with the remaining 25% brown rice or brown pasta.</p>
<p>All of your meals should contain a mixture of protein, carbohydrates and vegetables.   You should try and vary the color and type of veg you eat to gain the most nutrients and minerals and to protect yourself against diseases such as cancer.</p>
<p>Following a low carb diet, chicken is one of the many foods you can enjoy.  Just don&#8217;t have it for every meal!</p>

<p>One of the things we miss most when on a diet are our treats.  But if you are following low carb, cake receipes you can still have your cake and eat it to.</p>
<p>Usually candy, biscuits and cakes are the first foods to be put on the not allowed list.  These are followed very quickly by fast foods, takeaways and processed meals.  But on the low carb diet, you can eat cakes and biscuits so long as they follow specific recipes and do not make up the bulk of your meals.</p>
<p>You will find that you can adapt recipes you have at home. It won&#8217;t work for every cake but experimenting will be fun.  You need to swop out the white flour replacing it with whole meal and wheat germ. I wouldn&#8217;t suggest you try and make a sponge though as the brown flours are a lot heavier i.e. healthier than white so it probably won&#8217;t rise very well.</p>
<p>You can have a delicious cheesecake made with cottage cheese. In a food processor, combine 500g of 1% cottage cheese with 225g of low fat cream cheese.  Puree until smooth.  Add some non fat yogurt in a fruit flavor of your choice, some corn flour, 2 egg whites and one tablespoon of vanilla. Blend until completely smooth. Pour into a greased spring form pan.  Place this pan into a roasting tin and fill with enough water to come up to halfway of the sides of the spring form pan.</p>
<p>Bake in a preheated oven at gas mark 3 or 170c for 40 minutes. Turn the oven off and leave the low carb cake to stand for 30 minutes in the cooling oven.  Remove and let it cool at room temperature. Refrigerate for at least 2 hours before serving.  You can serve this delicious desert with a little compote of fresh or frozen fruits.  It will keep for up to three days in the fridge but I sincerely doubt it will last that long.</p>
<p>If cheesecake isn&#8217;t your favorite, you could cook some muffin cakes but using bran cereal and whole meal flour rather than white flour.   You can add freshly chopped fruit to the mix such as pear or banana to keep the muffins moist and tasty.</p>
<p>Oatmeal cookies are also worth a look as not only are they very tasty and a favorite with kids, but oatmeal is very good for you.  Combine 6 oz of large oat flakes with 3 oz of whole meal flour and 1oz of wheat germ.  Add a small teaspoon of baking powder, some cinnamon and a pinch of salt.  Melt a little margarine and add it to the mix with some brown sugar and one egg. Combine the whole lot together and then put heaped spoons of the dough onto some greaseproof paper.  Bake in a preheated oven for between 8 to 10 minutes (gas mark 4 or 190c) until the cookies are firm and golden.  Remove and place on cooling rack to cool down.  You can freeze these biscuits if the kids leave any over.  They will last for about one month in the freezer but should be eaten within 3 days of being made if not frozen.  They are perfect for your children&#8217;s lunchboxes and much healthier than the shop variety.</p>
<p>So who said you had to be deprived of treats on a diet? If you follow low carb cake receipes; treats are still on the menu!</p>
